I lived in Ireland while working as an au pair. I don’t miss the life of being an au pair; it wasn’t easy or exciting, but I really miss a few things and some of the people I met there (many of whom I’m still in touch with). Irish food was so different, and after one year I really couldn’t stand beans in tomato sauce and gravy anymore. But I seriously miss their traditional Irish soup made from vegetables and blended into a creamy consistency. Hand in hand with the soup prepared by my host family in Ireland were Irish scones. After a year there, I learned how to bake these awesome treats in sweet and salty versions. Sweet scones are served with butter, jam and whipped cream, and the salty ones are usually served with soup and spread with some butter. Here you can find the basic recipe, and you can make many delicious variations from this one. I love mug recipes because you don’t need a kitchen scale, and it is just so easy to use one mug for everything! Anyway, no more talking – here’s what you need:
Serving of 8-10 Irish scones (depends upon the serving size you’re making)
- 2 3/4 cups of flour (in Ireland they use the all purpose flour but in the Czech republic we use Hladká mouka)
- 4 tsp of baking powder
- 1 tsp of salt
- 2 tbsp of butter
- 180 ml of milk (one cup is usually 250 ml so I use less than one cup)
- 1 egg
Mix the dry ingredients well. Use a big bowl and put in all the flour. Mix it well with the baking powder and salt. Make a small hole in the middle of your flour hill, crack the egg and put it in there. If you have time, let the 2 tablespoons of butter melt outside of your fridge. If you don’t have time, just put those 2 tablespoons of butter in the mug and melt it a bit in your microwave. Just make sure the butter is not in the microwave too long. In a small bowl mix together the melted butter and the milk. Combined those ingredients into the dough. How could you ensure that the dough is just the right consistency? Very easily: the dough shouldn’t be too dry to fall apart, neither too sticky to your fingers. The bowl should be clean from the dough. When you’ve combined it enough, put the dough on a floured surface and knead it lightly to the smooth surface. Pat your dough down with your hands until it’s thick around 2,5cm. Flour it on the top and use a scone cutter for cutting out your scones. If you don’t have a cutter, no worries; just use a small mug. It depends on how large scones you prefer so you can use a bigger mug. Put your scones on a baking tray and glaze them with milk to give them the golden top when baked. Bake at 180 °C for 20-30 minutes, depends on the size of your scones.
Spread them with butter and jam or put some jam with whipped cream on them. Enjoy your baked goodies!
